Italian food is my favourite, so as you can probably guess, pizza and pasta are the go-to meals that I love cooking! This tortilla-pizza recipe is very healthy – it is much lower in carbs that other pizzas. It is the perfect light lunch or snack – if you want the treat of a ‘pizza’ but all you need for the base is a tortilla wrap!
I’ve shared my ‘Quickest DIY Pizza‘ recipe a few months ago, but this one takes literally half the time of that because you don’t even need to make dough. Choose whichever toppings you fancy. I went for mushrooms (that I just fried in some butter until they were golden) but you could choose whatever you fancy! Olives, sun-dried tomato, salami or pineapple (controversial I know) are all easy ingredients to throw on.
Ingredients (for 1 pizza)
1 tortilla wrap
1 tbsp of pizza topping sauce or pasta
75g mozzarella cheese
A sprinkle of Parmesan cheese
Basil & oregano to season
Your choice of toppings!
- Pre-heat your oven to around 200c
- Choose an oven-safe frying pan that can fit a tortilla wrap in. Add a tiny amount of olive oil or spray to the base of the pan and pop it onto a low-medium heat. This starts to crisp up the wrap as you apply your toppings.
- Pop your wrap into the frying pan, and spread your sauce over the base. Add your mozzarella and sprinkle Parmesan over the top, along with some oregano to season. Add your toppings.
- After about five minutes, pop the whole thing into the oven to let it cook through properly. This will melt your cheese and just keep an eye on it – once it looks ready (takes about 6 minutes roughly) then just add some basil and your done!
